1.  Tasty Mushroom Spirals

  • 4 rashers bacon, finely chopped
  • 250g. fresh mushrooms, finely chopped
  • 1 onion, finely chopped
  • 125g. cream cheese, cubed and softened
  • 15 slices bread
  • 50-60g. butter, melted.

Saute bacon, mushrooms and onion in frying pan until tender but not crisp, 5-8 mins. Stir in cheese cubes until melted. Remove mixture from heat. Trim crusts from bread and flatten slices slightly with a rolling pin. Spread mushroom mixture evenly over all slices. Roll up, swiss roll fashion, firmly, securing with toothpicks. Place rolls, seam side down on baking tray. Cover, and chill for at least 1 hour, or freeze in single layer, then store in an airtight container.* Brush rolls with melted butter. Bake in mod. hot oven until golden brown, 10-12 mins. Remove toothpicks and cut rolls crosswise in half. Serve warm.

* Note: Thaw at room temperature 20 mins. before baking.

2. Bean, Bacon And Tomato Casserole

  • 2 tblspn. olive oil
  • 1 small onion, chopped
  • 2 tspn. chopped fresh basil or 1 tspn. dried basil
  • 2 cloves garlic, crushed
  • salt and pepper
  • 4 rashers bacon, rinded and diced
  • 4 tblspn. chopped fresh parsley
  • 2 x 198g can tomatoes
  • 198g can white haricot beans, drained

Heat the oil in a flameproof casserole. Add the bacon, onion, parsley, basil and garlic and fry gently for 7 mins. until the onion Is soft and golden. Add the tomatoes, with their juice, and season with salt and pepper. Cover and simmer gently for 15 mins. Stir in the beans. Cover and cook for a further 10 mins.

Serve hot with vegetables or salad.

3. Beef Macaroni

  • 250g macaroni or spirals
  • 2 onions
  • 4 rashers bacon, diced
  • 1 small green pepper
  • 500g minced steak
  • 450ml can tomato soup
  • 11/4 cups water
  • 1 beef stock cube
  • 1 x 500g pkt mixed frozen vegetables
  • salt and pepper

Saute bacon pieces in a large pan-until transparent. Add sliced onions and green pepper, saute another 2 mins. Add minced steak and stir until well browned. Add
frozen vegetables soup and water, stock cube and salt and pepper. Cover pan and simmer for 20 mins. Add cooked macaroni and heat well.
