Crab And Camembert Quiche

  • 375g. pkt. frozen puff pastry
  • 155g. can crabmeat
  • 150g. can camembert cheese
  • 3 eggs
  • 300ml. carton thickened cream
  • 1/4 cup milk
  • 1 tspn. french mustard
  • salt, pepper
  • 2 tblspn. chopped parsley
  • 3 shallots or spring onions

Let pastry come to room temp. Roll out pastry to 3mm thickness to line 23cm flan tin, trim edges. Drain crab, arrange over base of pastry. Cut cheese Into Urn slices, place over crab. Put eggs, cream, milk, mustard, salt and pepper, parsley and chopped shallots into bowl, whisk well. Pour mixture carefully over cheese. Put a baking tray Into a very hot oven until tray is hot; place flan tin on tray and bake In very hot oven for 10 mins. or until Quiche starts to turn light golden brown. Reduce heat to moderate bake a further 20 mins. or until quiche is set. Serve hot.
Serves 6 - 8.

ONION QUICHE

(Short Pastry Flan Case)

  • 1 cup plain flour
  • 1 egg yolk & 60g. butter
  • pinch each salt and baking powder
  • 2 tblspn. iced water
  • good squeeze lemon juice

Sift flour, baking powder and salt into a bowl. Rub In butter lightly and evenly until mixture resembles bread-crumbs. Beat egg yolk, 1 tblspn. water and lemon juice and sprinkle evenly over flour, stirring with spatula to form a dough. Add extra water if necessary. Knead lightly on floured board, wrap and chill for 30 mins.. Roll out on lightly floured board to fit 20-23cm flan ring. Press pastry well into flan ring and cut pastry level with the top of the flan ring. Chill while preparing filling. The pastry can also be made quickly and easily in a food processor.

Filling:

  • 30g. butter & 2 eggs
  • 1/4 cup water
  • 1/2 tspn. salt (optional)
  • 11/2 cups sliced onions
  • 1/2 cup cream & 1/2 cup milk

pinch each ground nutmeg and pepper 1/4 cup grated swiss cheese
In heavy pan, heat butter and water with salt Add onions, cover and cook 10-12 mins. or until liquid in pan has almost evaporated. Lower heat and cook gently until onions are soft Drain. Beat eggs, cream and milk, nutmeg and pepper until just combined. Add onions and grated swiss cheese. Pour into the chilled flan case. Bake in hot oven 200oC for 10 mins. then reduce heat to moderate 180o and bake further 20 mins. or until custard is set.

Crustless Quiche

  • 1/2 cup SR flour
  • 3 eggs
  • 5 oz. grated cheese
  • 1 1/2 cups milk.

Add any fillings above and bake about 30 mins. on 350oF.
