Cheesy Bacon And Egg Slice
- 1/2 loaf bread sliced and cubed
- 125g. grated cheese
- 5 rashers bacon
- 3 shallots or 1 large onion
- 1 small green pepper
- 6 eggs
- 2 cups milk
- 1 tspn. dry mustard
- 1 tspn. worcestershire sauce
- 1 tbIspn. mayonnaise
- pepper
- 1/2 tspn. dried basil leaves
Toss cubes of bread evenly to form bottom layer in overproof dish.
Sprinkle with cheese. Cut bacon Into 2.5cm pieces and fry till crisp and
brown. Drain and place over cheese. Top with chopped shallots/onion and
chopped green pepper. Whisk eggs with fork. Add milk, mustard,
worcestershire sauce, mayonnaise, pepper and basil. Pour over bread
mixture. Top with chopped red pepper and cover with plastic food wrap.
Refrigerate overnight. Next day bake uncovered In moderate oven 50-60
rains. Serves 6.
Zucchini Slice
- 375g zucchini
- 1 large onion
- 3 rashers bacon
- 1 cup grated cheddar cheese
- 1 cup SR flour
- 1/2 cup oil
- 5 eggs
- salt, pepper
Grate unpeeled zucchini coarsely, finely chop onion and bacon.
Combine zucchini, onion, bacon, cheese, sifted flour, oil and lightly
beaten eggs, season with salt and pepper. Pour into well-greased
lamington tin (base measures 16cm x 26cm), bake in moderate oven 30 to
40 rains. or until brown. Serves 4 to 6.
